  • Thin noodles or square pasta

Steps to Make It :

Step 1 : Rinse mushroom and cover them with approx 1 liter water and let it soak over night or for at least 5 hours.
Step 2 : Add the mushrooms to another vessel and add 2 more liters water and boil them.
Step 3 : Add two bay leaves, add 5 grains of all spices, add 4or5 bits of black pepper.
Step 4 : Select the vegetables you want to add. Peel them and cut their ends. You can add two carrots, 2 shallots.
Step 5 : Add these vegetables to the vessel that had mushroom boiling in the water, soften them for 4-5 minutes.
Step 6 : Add 2 tablespoons of salt and 1 tea spoon of brown sugar.
Step 7 : Stir it well and you can cover the vessel for it to cook better.
Step 8 : Add cooked pasta into the soup and garnish it with fresh parsnips.

When you have to follow this procedure for more than two people, you will have to increase the quantity of ingredients based on the no of people.

  4. Take another bowl and to that add the mixed spice, cinnamon, flour, sugar, suet, orange zest, bread crumbs and nuts. Stir them well and add the marinated dry fruits to this mixture and stir well.
  5. Beat the eggs in a small bowl and add this beaten egg into the dry fruits mix bowl.
  6. It is time to do the baking and relish your Christmas pudding. Add all these tasty ingredients to the bowl that was greased with butter. Evenly spread the mixture and press it neatly together.
  7. Cover this entire mix with a baking parchment and place a layer of aluminium foil and tie it with a string at the mouth f the vessel so that it remains intact.
  8. Take a steamer set, add some water in it. Now, keep the bowl of pudding in the steamer set. This pudding has to be cooked for 7 hours in the simmering water. Keep a check on the water level it should not dry. The pudding will turn out to be sticky, densely spongy and dark.
  9. Once it is made, remove the pudding from the steamer let it cool completely. Take off the paper, use a skewer to prick the pudding and now pour in little extra brandy.
  10. Use a greased paper and re-tie the pudding with a string.
  11. Store it in a cool and dry place until Christmas day.
  12. On Christmas day, steam the pudding another time for an hour. You can serve this pudding with custard, brandy butter, brandy or rum sauce.

  1. Before you grease the oven, preheat it to 350 degrees. The casserole that you use to grease it should be 9*13-inches in length and width.

  • Cranberry juice – 6 ounces
  • Coconut rum – 2 ounces
  • Grenadine – 1 ounce
  • Candy canes to garnish(optional)
